Chef Walter Sidoravicius has dedicated his life to the art of sushi and Japanese cuisine. Born in Venezuela with European roots, his interest in gastronomy began early in life. His passion for sushi eventually led him to Japan, where he lived for several years immersed in the country’s culinary culture.

During his time in Tokyo he trained at Nobu, refining his technique under the traditional Japanese philosophy based on discipline, precision and attention to detail. In 2014 he became a finalist at the World Sushi Cup in Tokyo. After working in several international restaurants and collaborating with the Basque Culinary Center, he opened Omakase by Walt in 2021, the first omakase sushi restaurant in Ibiza.

Each one of his dishes is the result of a very cared selection of the ingredients: seasonal products mixed respecting the traditional techniques, adding a personal touch. A special selection of Japanese sake will accompany the food offering the perfect match with every meal. An authentic and exclusive experience, that will transport the guests directly to Japan.

We are open from Tuesday to Saturday for dinner. The experience will last approximately two and a half hours. The reservation will be confirmed by payment of a deposit. Cancellations made less than 72 hours before the dinner time are non-refundable. For groups of 5 or more, we request cancellation 1 week before the reserved day, otherwise no refund will be made. In case your group number decreases, the full price of the menu per person will be charged.
